Today we rode the Salty Dog mtn bike course in Salmon Arm. We had a few new friends from Kelowna join us, and Rob asked me to post this recipe. I think this is my favorite 'training' calorie-dense treat so far!

1/2 c butter softened
1 1/2 c peanut butter
2 c brown sugar
3 eggs
1 tsp vanilla
3 c old fashioned rolled oats
2 c rice krispies (I used the organic Nature's Path ones as they are crunchier)
1 tsp soda
1 c chocolate chips
1/2 cup roasted peanuts

Cook at 375, but don't preheat, because they have to cool in fridge first.

Cream butter and peanut butter. Stir in brn sugar, and then eggs one at a time. Mix in vanilla.

In a separate bowl, mix oats, cereal, soda and chocolate chips. Combine with peanut butter mixture and refrigerate for at least an hour. Form into balls, and bake for 12 minutes until just slightly brown. Cool and enjoy.

Thanks for the great cookies Ginny and thanks to everyone for an awesome day of training on the Salty Dog course! I also want to add how impressed I am with your decision to create new goals for yourself, get out of your comfort zone and sign up for Barry's Roubaix. I truly admire your existential "here and now" approach to life and how you've applied this to the 2010 race season. Some people put things off or never feel "ready" to try something new or preface most of their experiences with "if only... or my excuses include...." but not you!!!!!! The Barry's Roubaix will be a great experience and you have the perfect bike for it, the Ruby (Women's version of the Roubaix)! You've inspired me to perhaps get out of my own comfort zone and try something new!

It helps to be surrounded by 'cracker' athletes like you and the guys. I've actually been flirting with the idea of bike racing for 3 years, and always been too scared. This year, I will put my ego in my back pocket, expect to get schooled for the first season, but relish in the new experience. As we discussed on Friday night "Get comfortable being un-comfortable". Looking forward to having a travel companion and watching how the Cat 1/2 s get it done.
