I'm not one for measuring... so this will be vague:
Cook spelt 1:2 spelt:water - boil, stir, turn it down for 45 min, turn heat off and leave covered for another 15 min then cool.
Add: frozen corn, frozen peas, diced celery, diced carrots, chopped fresh cilantro, crumbled feta cheese.
Drizzle with: lemon juice & almond oil or your favorite oil.

Not sure if it fits with gluten free since spelt is wheat. My naturopath says it has very little gluten. I have some oat kernels that I was going to try in the recipe instead. Just haven't gotten around to it.
